Palate: Tart, bright, and hyper-crunchy. The white Savagnin injects an electric, elevated line of acidity that cuts through the juicy, primary red fruit of the Syrah, leaving a vibrant, mouthwatering finish.
Winemaking
The 2024 blend combines certified-organic Syrah from the Landsborough Vineyard in the Pyrenees with Savagnin sourced from the King Valley. The Syrah component is aged in neutral French oak barrels to soften its edges, while the white Savagnin component is handled entirely in stainless steel to capture its roaring natural acidity. True to the Defialy ethos, the parts are blended and bottled completely wild-fermented, unfiltered, unrefined, and with zero additions of any kind—just grapes.
Farming
Winemaker Micah Hewitt partners with growers who prioritize regenerative, sustainable, and organic viticulture across Victoria's cooler sub-regions. The Syrah vines sit on the fractured mudstone and quartz soils of the Pyrenees foothills, forcing deep root penetration and low yields. Meanwhile, the Savagnin benefits from the continental climate of the King Valley, where dramatic diurnal temperature drops preserve massive acidity levels in the grapes.
