Tasting Profile and Key Notes

  • Aroma: Wild muddled strawberries, dark crimson cherries, wet asphalt, and an interesting streak of crushed black pepper and dried twigs.

  • Palate: Tangy, juicy, and energetic. Vibrant cranberry and raspberry fruit layers crash into a distinct smoky, volcanic minerality, held together by ultra-fine, chalky tannins and an electric, clean finish.

Winemaking

The old-vine Grenache fruit undergoes a 10-day whole-bunch carbonic maceration in an anaerobic environment to extract bright fruit aromatics and soft, supple tannins. The fruit is gently pressed and then moved into a strategic mix of old, neutral oak barrels and fiberglass tanks to let the wine settle naturally without wood influence. Fermentation occurs purely through native yeasts, and the wine is bottled entirely unfined, unfiltered, and with absolutely zero added sulfur (<10mg/L total).

Farming

Sylvain Bock organically farms old vines nestled in a rugged, highly unique macroclimate in the southern Ardèche near Alba-la-Romaine. The vineyard soils are a complex, ancient patchwork where marine limestone rocks meet dark basalt from long-extinct volcanic activity. To safeguard the wine's trademark freshness and energy, harvesting is done exclusively by hand during the cool, early morning hours to keep grape temperatures low before they reach the cellar.
