Tasting Profile and Key Notes

Aroma:
A refined expression of Muscat with aromas of orange blossom, jasmine, citrus peel, ripe peach, and delicate tropical fruit. Layers of sea breeze, crushed stone, dried herbs, and subtle spice reveal the wine’s mineral-driven character rather than the typical overt sweetness associated with the grape.

Palate:
Dry, energetic, and highly textured, showing vibrant citrus, white peach, and floral notes balanced by a pronounced saline minerality. The palate is elegant and tense, with a fine structure, refreshing acidity, and a long finish marked by quartz-like freshness and a subtle herbal complexity.

Winemaking

Produced from hand-harvested Muscat Blanc à Petits Grains, the wine is fermented naturally with indigenous yeasts and made without added inputs. The wine is gently handled with no aggressive extraction, then aged partly in concrete vats and amphora to enhance texture, purity, and mineral expression. Bottled unfined, unfiltered, and with minimal to no added sulfur, Octave reflects the philosophy of the Sous Le Végétal project.

Farming

The grapes come from eight carefully selected parcels around Mount Karvounis on the island of Samos, planted across diverse mineral-rich soils including schist, quartz, limestone, and volcanic rock. The vineyards are farmed organically with respect for the natural ecosystem, allowing the unique Mediterranean climate, high elevation, and maritime influence to shape the wine’s freshness and mineral character.
