Winemaking

The Trebbiano grapes are hand-harvested from organically and biodynamically farmed vineyards before undergoing spontaneous fermentation with indigenous yeasts. The wine is fermented naturally in stainless steel tanks and bottled with its natural carbonation preserved, creating a lively frizzante style. It is made without fining, filtration, or added sulphur, following Ausonia’s low-intervention philosophy.

The winery practices certified organic and biodynamic farming, focusing on biodiversity, healthy soils, and natural vineyard balance to express the purity of native Abruzzese varieties.
