Tasting Profile and Key Notes
Aroma:
Fresh and vibrant with aromas of lemon zest, lime, green apple, pear, and white peach. As the wine opens, delicate notes of white flowers, fresh mint, Mediterranean herbs, and wet stone emerge, giving the wine an elegant, mineral-driven profile rather than an overtly fruity one.
Palate:
Dry, crisp, and beautifully balanced with lively acidity. Flavours of green apple, citrus, white peach, and pear are complemented by subtle herbal notes and a chalky, saline minerality. A short period of lees ageing adds a gentle creaminess without sacrificing freshness, leading to a clean, persistent finish.
Winemaking
The 100% Garnacha Blanca grapes come from old vines in San Martín de Unx, Navarra, planted on limestone-rich soils at around 700 metres elevation. After a 12-hour cold soak, the grapes are gently pressed and fermented in temperature-controlled stainless steel tanks. The wine is then aged for three months on its fine lees, enhancing texture while preserving purity and freshness.
