An expressive and approachable Cahors with aromas of blackberry, black cherry, cassis, and raspberry, complemented by notes of violet, liquorice, graphite, and subtle cocoa. As the wine opens, earthy undertones and gentle spice emerge, reflecting the limestone terroir of Cahors.
Palate:
Medium to full-bodied with vibrant freshness and polished tannins. Juicy flavours of blackberry, blackcurrant, black plum, and raspberry are balanced by lively acidity and a mineral backbone. Hints of dark chocolate, liquorice, and crushed stone add depth, while the finish is savoury, clean, and persistent. Compared with the estate's single-vineyard wines, this cuvée focuses more on fruit purity and drinkability.
Winemaking
The grapes are harvested by hand from organically farmed vineyards and fermented with indigenous yeasts using gentle extraction to preserve freshness and finesse. The wine is aged for around 12 months in seasoned 500-litre French oak barrels, allowing the fruit to remain the focus while softening the tannins. It is bottled with minimal intervention to express the character of Malbec and the Cahors terroir.
Farming
Château Combel-La-Serre is a family estate run by Julien and Sophie Ilbert, certified organic (Ecocert). The vineyards are planted on clay-limestone soils across the Cahors plateau, where the combination of limestone bedrock, elevation, and a continental climate produces Malbec with freshness, minerality, and excellent ageing potential. The estate is widely regarded as one of the leading producers in the modern revival of Cahors.
