Tasting Profile and Key Notes
Aroma:
A lively and aromatic natural white showing expressive notes of gooseberry, white flowers, ripe apple, and citrus peel. The Scheurebe and Huxelrebe bring exotic fruit aromas such as passionfruit, grapefruit, and subtle muscat-like floral notes, while the Pinot varieties contribute rounder stone fruit, pear, and gentle nutty complexity.
Palate:
Light-bodied, fresh, and textured with bright acidity and a gentle phenolic grip. Flavours of green apple, pear, gooseberry, lemon zest, and white peach are balanced by herbal notes, mineral freshness, and a subtle tea-like complexity from skin contact. The finish is clean, slightly savoury, and refreshing, making it extremely easy to drink while still showing natural wine character.
Winemaking
The Scheurebe and Huxelrebe grapes undergo approximately 1.5 weeks of skin maceration, adding texture, aroma, and structure. The Weissburgunder, Grauburgunder, Riesling, and Silvaner are whole-cluster pressed and fermented separately before blending. Fermentation occurs spontaneously with indigenous yeasts, followed by minimal intervention and a small amount of sulphur before bottling.
Farming
Bianka & Daniel Schmitt farm their vineyards biodynamically under Demeter certification in the Wonnegau area of southern Rheinhessen, around Flörsheim-Dalsheim, Monsheim, and Kriegsheim. The vineyards are managed with a focus on biodiversity, healthy soils, and natural vineyard balance, with minimal chemical intervention. The region’s limestone-rich soils contribute freshness, minerality, and tension to the wines.
