Defialy Pale Blue Eyes 2024

MYR 280.00

Type: White (Natural / Low-Intervention / Oxidative Style)
Region: King Valley, Victoria, Australia
Grapes: 100% Savagnin
Alcohol ABV: 12.9%

Tasting Profile and Key Notes:
Elegant and complex, inspired by the oxidative white wines of Jura. Aromas of green apple, pear, lemon peel, preserved citrus, ginger spice and toasted nuts are layered with subtle florals and savoury oxidative notes. Medium-bodied with bright acidity, creamy texture, fine lees complexity and a long finish showing nuttiness, minerality and a distinctive Jura-like character.

Winemaking:
The Savagnin grapes are direct-pressed and fermented naturally with indigenous yeasts before ageing in seasoned oak barrels. The wine is aged oxidatively under a layer of flor (Jura-inspired style) without topping up, allowing nutty, savoury and complex flavours to develop over time. It is bottled unfined, unfiltered and with minimal sulphur addition, preserving the wine’s natural texture and energy.

Farming:
The fruit comes from King Valley vineyards in Victoria, Australia, where the cool climate helps preserve acidity and aromatic freshness in Savagnin. DEFIALY works with sustainably managed vineyards, focusing on regenerative practices and minimal intervention both in the vineyard and cellar. The combination of careful farming, cool-climate conditions and natural winemaking creates a wine with purity, tension and a strong sense of place.
