Bright acidity is balanced by a creamy lees texture and savoury umami notes, leading to a long, saline finish with remarkable freshness. Although oxidative in style, the wine remains vibrant, precise, and highly food-friendly.

Winemaking

Hand-harvested King Valley Savagnin is direct-pressed and fermented naturally with indigenous yeasts. The wine is aged oxidatively on its lees in seasoned oak barrels for approximately 12 months without topping up, encouraging a delicate flor character inspired by the wines of Jura, before spending one month in stainless steel prior to bottling. It is bottled unfined, unfiltered, and with only a small addition of sulphur (around 15 ppm), preserving both purity and stability.

Farming

The fruit is sourced from sustainably farmed vineyards in the cool-climate King Valley of Victoria. Warm days and cool alpine nights allow the Savagnin to achieve full flavour ripeness while retaining vibrant natural acidity.
