Palate:
Light-bodied, refreshing, and textural with lively natural bubbles. Flavours of crisp apple, tropical fruit, guava, lemon zest, and citrus are balanced by refreshing acidity and a slight touch of residual sweetness. The finish is clean, juicy, and slightly saline, making it extremely easy to drink.
Winemaking
Made from 100% Greco di Tufo grown in Heathcote, Victoria. The wine follows a natural frizzante / pét-nat-inspired method, where fermentation continues in bottle to create natural carbonation. It spends time on lees before release, adding texture and complexity while maintaining the vibrant fruit character of the variety. No heavy intervention is used, allowing the lively personality of the grape to shine.
