Winemaking

The Vermentino and Nero d’Avola grapes are hand-harvested separately from the Bassham Family Organic Vineyard in Barmera, Riverland. Each variety is pressed and fermented separately using wild indigenous yeasts in stainless steel tanks before being blended and bottled to complete the final stage of fermentation in bottle, creating the traditional pétillant naturel (Pet-Nat) style. The wine is bottled unfined, unfiltered, and made with minimal intervention to preserve its freshness and natural energy.
