Tasting Profile and Key Notes
Aroma:
Elegant and complex aromas of ripe yellow apple, pear, mirabelle plum, and white peach, layered with notes of citrus peel, dried herbs, subtle smoke, and wet stone minerality. A gentle earthy and savoury character adds depth, reflecting the mature vineyard sites and long lees ageing.
Palate:
Dry, precise, and beautifully structured with Riesling’s signature vibrant acidity. The palate shows flavours of orchard fruits, lemon zest, and ripe stone fruits, supported by a firm mineral backbone, delicate phenolic texture, and a long, savoury finish. The wine balances richness and freshness, showing both elegance and remarkable complexity.
Winemaking
The grapes are hand-harvested from several carefully selected vineyards in Pfalz and undergo spontaneous fermentation with indigenous yeasts. Each parcel is vinified separately, with fermentation taking place in old wooden barrels and stainless steel before extended ageing on full lees for approximately 25 months. The wine is bottled unfined and unfiltered, with minimal intervention to preserve its natural expression and terroir character.

The vineyards are located around Großkarlbach and Laumersheim in Pfalz, including sites with limestone, gravel, sand, loess, and alluvial soils. Dennis Wolf practices organic and biodynamic farming, focusing on hand harvesting, healthy soils, and natural vineyard balance to allow Riesling to express the unique character of each site.
