Tasting Profile and Key Notes
Aroma:
Expressive aromas of juicy black cherry, raspberry, and wild blueberry are complemented by sweet baking spices, thyme, and refreshing mint. Delicate floral notes and subtle Mediterranean herbs add elegance, while the wine's purity keeps the bouquet vibrant and inviting.
Palate:
Light to medium-bodied, fresh, and vibrant with crunchy red fruits, Morello cherry, red currant, and raspberry at its core. Fine, savoury tannins and lively acidity provide excellent balance, while the finish is long, pure, and effortlessly drinkable. Despite its southern Rhône origins, Trinity retains remarkable freshness and finesse.
Winemaking
The grapes are 100% hand-harvested and fully destemmed before undergoing approximately 15 days of maceration. Fermentation is carried out with indigenous yeasts, followed by 10 months of ageing in concrete tanks to preserve fruit purity and freshness. The wine is bottled without fining or filtration, reflecting Domaine de L'ECU's low-intervention philosophy.

The fruit is sourced from organically farmed vineyards in the southern Rhône Valley, where bush-trained Grenache and Cinsault grow on red clay soils scattered with rolled pebbles and gravel. Vineyard work focuses on soil cultivation, canopy management, and manual harvesting, allowing the Mediterranean terroir to produce fruit with both concentration and freshness while faithfully expressing its natural character.
