Tasting Profile and Key Notes
Aroma: Wild alpine strawberries, tart pomegranate, hibiscus tea, and a subtle, complex web of bitter herbs and white pepper.
Palate: Unbelievably alive and high-toned; crunchy sour cherry and cranberry fruit are backed by electric acidity, a signature Jura-style mineral sap, and virtually zero noticeable tannin.
Winemaking
The grapes are harvested by hand and undergo an entirely additive-free, wild-ferment vinification process in Arbois with zero added sulfur. The Carignan is directly pressed to create a bright, high-acid juice matrix, while the Grenache is infused gently into that fermenting juice as 100% whole bunches for a semi-carbonic maceration. After pressing, the two varieties are assembled in neutral tank to rest on their fine lees until the following spring before being bottled completely unfined and unfiltered.
Farming
The fruit for this specific cuvée is sourced through a partnership with trusted grower Claude Ughetto, who practices strict biodynamic farming in the Vaucluse region of the Southern Rhône. Vines are planted in wind-swept, sun-drenched vineyards where they develop excellent phenolic ripeness while maintaining lightweight structural frames. Alice Bouvot selects and harvests these parcels manually, ensuring only pristine, chemical-free bunches make the journey north to the Jura.
