Light-bodied with vibrant acidity, silky texture and a crisp, bone-dry finish that combines refreshing red fruit with delicate spice and minerality.
Winemaking:
The wine is produced from old-vine Carignan and Mourvèdre, which are whole-cluster direct pressed together before co-fermentation with indigenous yeasts. It is aged for approximately five months in concrete tanks, preserving freshness, purity and aromatic precision without oak influence. Bottled unfined, unfiltered and with no additions after fermentation, Rollaball reflects Tom Lubbe's minimalist approach to natural winemaking.
Farming:
The fruit comes from certified organic and biodynamically farmed vineyards around Calce in Roussillon, where old vines grow on schist and black marl ("marnes noires") soils. The dry Mediterranean climate, combined with cooling mountain influences, allows the grapes to ripen fully while maintaining freshness and naturally low alcohol. Domaine Matassa emphasizes regenerative farming, biodiversity and healthy living soils, producing expressive wines that are both vibrant and terroir-driven.
