Aroma:
Bright and expressive with aromas of wild strawberry, raspberry, red cherry, and pomegranate. Delicate floral notes of rose petals are complemented by hints of citrus zest, brioche, and freshly baked bread from extended lees ageing.
Palate:
Dry, crisp, and lively with fine, persistent bubbles. Fresh flavours of strawberry, cranberry, redcurrant, and cherry are balanced by vibrant acidity and a creamy mousse. Gentle notes of almond, pastry, and mineral freshness lead to a clean, elegant finish.
Winemaking
Made using the Traditional Method (Méthode Traditionnelle) with a second fermentation in bottle. The 100% Garnacha grapes are gently pressed to obtain a delicate salmon-pink colour before fermentation. The wine is aged on its lees for at least 12 months, developing fine bubbles, texture, and subtle brioche complexity while retaining vibrant fruit expression.

Pago de Tharsys is a family-owned estate in Requena, one of Spain's highest-altitude wine regions. The vineyards are cultivated under organic and sustainable farming practices on limestone and clay soils. Warm Mediterranean days combined with cool nights help preserve the freshness and acidity essential for quality sparkling wines.
