Tasting Profile and Key Notes

Aroma:
A complex and expressive Alsatian white with aromas of ripe pear, white peach, quince, and citrus peel. The aromatic varieties bring floral notes of orange blossom, jasmine, and lychee, while Sylvaner and Riesling add freshness with hints of herbs, wet stone, and subtle spice. There is also a gentle natural wine character with savoury and mineral nuances, giving the wine depth and personality.

Palate:
Dry, textured, and full of character with a beautiful balance between richness and freshness. The palate shows flavours of stone fruit, citrus, pear, and exotic fruit, supported by bright acidity and a mineral backbone. The finish is long and savoury, with notes of herbs, spice, and a slight saline quality. Despite its aromatic grape varieties, the wine remains elegant and structured rather than overtly fruity.

Winemaking

Guet Apens is made from a traditional Alsace field blend of five grape varieties. The grapes are direct pressed together and co-fermented, allowing the different varieties to integrate naturally. The wine is fermented with indigenous yeasts and aged for approximately 12 months in oak barrels, with minimal intervention. It is bottled unfiltered, with only a small addition of sulphur, preserving the wine’s natural texture and complexity.

Farming

The grapes come from Domaine Albert Hertz in Eguisheim, Alsace, from vineyards certified organic and biodynamic (Demeter & Biodyvin) since 2007. The vines grow on clay-marl soils under Alsace’s continental climate, with around 30-year-old vines providing concentration and depth. The warm south-east exposure allows aromatic ripeness while maintaining the freshness and mineral character typical of Alsace.
