Tasting Profile and Key Notes
Aroma:
Elegant and expressive aromas of ripe pear, white flowers, fresh citrus peel, and orchard fruits. Subtle notes of honey, almond, and mineral freshness add complexity, while the delicate floral character highlights the purity of the heritage pear varieties.
Palate:
Light, refreshing, and beautifully balanced with fine, delicate bubbles. The palate shows juicy pear flavours, crisp acidity, and a gentle natural sweetness balanced by a clean mineral finish. Elegant rather than rustic, with excellent freshness and a long, thirst-quenching finish that makes it equally enjoyable as an aperitif or alongside food.
Winemaking
The pears are hand-harvested over several months according to each variety’s ripeness, then individually processed before gentle pressing and natural settling. Fermentation takes place slowly with indigenous yeasts in vats, with the wine undergoing traditional ancestral fermentation before bottling to create its fine natural effervescence. No added sugar is used, allowing the natural fruit character and residual fructose of the pears to define the final expression.
Farming
The pear orchards are located in Normandy and managed organically and biodynamically, with many trees being traditional heritage varieties several decades to centuries old. The deep-rooted pear trees grow in mineral-rich soils of granite, schist, and clay, allowing the fruit to develop remarkable aromatic complexity, freshness, and a strong sense of terroir.
