Tasting Profile and Key Notes:
Elegant and textured, with aromas of ripe pear, white peach, apple, bergamot, chamomile and wild herbs. Medium-bodied with a silky mouthfeel, bright acidity and a long, dry finish showing delicate bitterness, mineral freshness and subtle savoury complexity.

Winemaking:
The grapes are hand-harvested from granite soils in Ardèche and whole-bunch pressed before natural settling. Fermentation takes place spontaneously with indigenous yeasts in concrete tanks, where the wine remains on its lees for around 6–8 months to develop texture and complexity. The wine is bottled with minimal intervention, without fining or filtration, preserving the purity of Clairette and the expression of the terroir.

Farming:
The vineyards are organically farmed on warm granite slopes in the Ardèche region of the northern Rhône. Eric Texier has practised organic viticulture since establishing the domaine, focusing on living soils, biodiversity and manual vineyard work. The old vines and granite terroir contribute freshness, mineral tension and the distinctive elegant character of Adèle.
