Winemaking:
The Pinot Noir is hand-harvested and gently whole-bunch pressed with minimal skin contact to achieve its delicate colour and refined structure. Fermentation takes place with indigenous yeasts in seasoned French oak, followed by extended ageing on fine lees to build texture and complexity. The wine is bottled with minimal intervention, preserving the purity and precision of the fruit.

The fruit is sourced from a single sustainably farmed vineyard in the Macedon Ranges, one of Australia's coolest wine-growing regions. The vineyard's volcanic soils and cool climate allow for slow ripening, preserving freshness, aromatic lift and natural acidity. Joshua Cooper works closely with the grower using thoughtful, low-intervention viticulture to produce wines that transparently express vineyard and vintage.
