Tasting Profile and Key Notes:
Fresh and vibrant, with aromas of lime blossom, green apple, pear, lemon zest and white flowers, complemented by subtle gooseberry and chalky minerality. Light to medium-bodied with crisp acidity, a silky texture and a clean, refreshing finish that highlights the purity and elegance of unoaked Burgundy Chardonnay.
Winemaking:
The fruit is sourced from 45-year-old vines rooted in limestone-rich soils of the northern Mâconnais. The grapes are hand-harvested, gently pressed and fermented spontaneously with indigenous yeasts in stainless steel tanks, before ageing for approximately seven months on fine lees. The wine is bottled unfined and unfiltered with minimal intervention, preserving freshness, texture and its authentic expression of terroir.
Farming:
The vineyards are farmed organically with a strong emphasis on soil health, biodiversity and sustainable viticulture. The limestone-rich soils and cool climate of the northern Mâconnais provide excellent conditions for producing Chardonnay with vibrant acidity and pronounced mineral character. Under Valentin Montanet, La Sœur Cadette follows a low-intervention philosophy, allowing each vineyard to express its natural identity with minimal manipulation in both vineyard and cellar.
