Pure and elegant with aromas of lemon zest, green apple, white peach, pear, and delicate white flowers. Subtle notes of chalk, wet stone, citrus blossom, and fresh herbs add complexity, reflecting the cool-climate Burgundy character and limestone-influenced terroir.
Palate:
Fresh, precise, and beautifully balanced, showing flavours of citrus, green apple, white peach, and subtle almond. Bright acidity provides energy, while a gentle creamy texture from lees contact gives depth without heaviness. The finish is clean, mineral-driven, and elegant, with a lingering saline freshness typical of well-made Bourgogne Blanc.
Winemaking
The Chardonnay grapes are sourced from organically farmed vineyards and harvested by hand. Fermentation occurs spontaneously with indigenous yeasts, with the wine aged partly in stainless steel tanks and partly in large neutral oak foudres for added texture and complexity while preserving freshness. The 2024 vintage was bottled without filtration, following Domaine de la Cadette’s low-intervention approach.

The vineyards are located in Burgundy, with fruit sourced predominantly from the Mâconnais area, including sites around Péronne. The vines are organically farmed, growing on clay and limestone soils that contribute to the wine’s balance between richness, minerality, and freshness.
