Tasting Profile and Key Notes
Aroma:
A complex and elegant orange wine with aromas of ripe yellow apple, pear, quince, and dried citrus peel. Layers of chamomile, wild herbs, almond skin, dried flowers, and subtle volcanic minerality add depth. The native Lazio varieties create a beautiful balance between Mediterranean freshness and the savoury complexity from skin contact.
Palate:
Medium-bodied with a textured and refined mouthfeel. The palate shows flavours of yellow fruit, preserved lemon, apricot, and herbal tea, supported by gentle tannins from maceration. Bright acidity keeps the wine energetic, while notes of almond, spice, and saline minerality lead to a long, savoury finish.
Winemaking
The grapes undergo spontaneous fermentation with indigenous yeasts and extended skin maceration in open French oak vats. The 2022 vintage sees around 15 days of maceration, followed by pressing and further ageing for approximately one year on fine lees in 10–20 hl oak barrels. The wine is bottled without clarification or filtration and rests in bottle before release, preserving its natural texture and complexity.

The vineyards are located around Gradoli, Lazio, near Lake Bolsena, where vines grow on volcanic soils originating from the ancient volcanic landscape of the area. Le Coste farms organically with biodynamic practices, focusing on biodiversity, soil health, and natural vineyard balance. The volcanic terroir contributes freshness, minerality, and a distinctive sense of place to the wine.
