Tasting Profile and Key Notes

Aroma:
A vibrant and elegant expression of Lazio Sangiovese, showing aromas of sour cherry, red plum, raspberry, and wild berries. Layers of violet, dried herbs, earth, and subtle spice add complexity, with a distinctive volcanic freshness reflecting the terroir around Lake Bolsena.

Palate:
Medium-bodied, juicy, and refined with bright acidity and silky tannins. The palate delivers flavours of sour cherry, cranberry, red currant, and plum skin, balanced by savoury notes of herbs, leather, and forest floor. The finish is fresh and mineral-driven, with excellent tension and drinkability.

Winemaking

The grapes are traditionally planted together in the vineyard and harvested by hand. After destemming, spontaneous fermentation takes place with indigenous yeasts, followed by around 3 weeks of maceration on the skins with gentle extraction. The wine is aged for approximately 1 year in 10–20 hl chestnut and oak barrels, followed by further bottle ageing before release.

The vineyards are located in Gradoli, Lazio, near Lake Bolsena, where vines grow on volcanic soils created from the ancient volcanic landscape of the region. Le Coste farms organically with biodynamic principles, focusing on biodiversity, soil health, and traditional vineyard practices to express the natural identity of the territory.
