Tasting Profile and Key Notes

Aroma:
A lively and expressive nose of fresh black cherry, blackberry, raspberry, and plum, layered with notes of wild herbs, black pepper, violet, and Mediterranean garrigue. Subtle earthy tones, dried flowers, and a gentle smoky character add complexity, reflecting the old-vine Carignan and the rugged terroir of Ardèche.

Palate:
Juicy, fresh, and medium-light bodied with vibrant acidity and silky tannins. The palate shows flavours of dark cherry, blackberry, cranberry, and plum skin, balanced by savoury herbal notes, peppery spice, and a mineral freshness. The finish is clean, energetic, and slightly rustic, with excellent drinkability and a natural freshness that makes it ideal served slightly chilled.

Winemaking

The Carignan grapes are hand-harvested from organically farmed old vines and undergo spontaneous fermentation with indigenous yeasts. The wine is made with whole-cluster carbonic maceration, allowing gentle extraction while preserving freshness and bright fruit character. It is aged in neutral vessels before bottling unfined, unfiltered, and with minimal or no added sulphur, reflecting Le Mazel’s low-intervention philosophy.
