Winemaking

All four grape varieties are harvested by hand and fermented completely separately in small batches to preserve their individual character. Vinification occurs using zero-compromise natural methods: spontaneous fermentation with native yeasts, entirely manual punching down, and no mechanical pumps. The components age individually in a mix of stainless steel tanks and clay amphorae before blending, resulting in a wine bottled completely unfined, unfiltered, and with absolutely no added sulfur.

Winemaker Dane Johns works exclusively with small-scale, meticulously minded growers in Victoria who practice strict organic farming principles without synthetic chemicals. The fruit for this cuvée thrives in the ancient, iron-rich Cambrian soils of Heathcote, known for giving Italian varieties a sharp mineral edge. Vines are managed with deep respect for biodiversity, encouraging natural ground cover and healthy living soil microbiomes to regulate vine health naturally.
