Winemaking:
The grapes are hand-harvested from the historic Ayler Kupp VDP.Grosse Lage vineyard, selecting only perfectly ripe, healthy fruit rather than overripe berries used for Spätlese. Whole clusters are gently pressed and fermented spontaneously with indigenous yeasts at cool temperatures to preserve freshness, aromatic purity and delicate fruit. The wine is bottled with its naturally low alcohol and balanced residual sugar, showcasing the classic fine-fruited Kabinett style of the Saar.
Farming:
The vineyards are located on the steep south-facing slopes of Ayler Kupp, where 25–40+ year-old vines grow on Devonian slate soils with gradients of up to 55%. Peter Lauer farms sustainably with meticulous manual vineyard work, focusing on healthy fruit and expressing the individuality of each vineyard parcel (Faß). The cool Saar climate, slate soils and long growing season produce Rieslings of remarkable finesse, electric acidity and unmistakable mineral character.
