Winemaking
Produced from the steep slopes of Ayler Kupp, this Kabinett is crafted from carefully selected Riesling grapes harvested at optimal ripeness. The grapes are gently whole-cluster pressed and undergo spontaneous fermentation with native yeasts, followed by slow fermentation to preserve freshness and aromatic purity. The wine is bottled with its natural residual sugar, creating the classic Kabinett balance of sweetness, acidity, and minerality.
