Tasting Profile and Key Notes:
Wild and refreshing, with aromas of ripe pear, white peach, citrus peel, Mediterranean herbs and floral notes, complemented by a subtle savoury and earthy character. Light-bodied with delicate natural bubbles, bright acidity, gentle fruitiness and a clean mineral finish with a slightly rustic, energetic personality.

Winemaking:
Hidra is created from the pressing of grapes remaining after the draining of other Sicus single-vineyard wines, resulting in a freer, experimental field blend. The whole grapes undergo an infusion period ranging from 8 to 90 days before ageing for around 40 days in amphora and a further eight months in stainless steel tanks. In the 2021 vintage, additional fermenting juice was added before bottling to complete fermentation naturally in bottle using the ancestral Pét-Nat method.

Farming:
The grapes come from organically farmed vineyards around Bonastre in the Massís de Bonastre area of Penedès, where Mediterranean influence and limestone-rich soils shape the wines. Sicus focuses on indigenous grape varieties, biodiversity and traditional farming methods to preserve the natural expression of the landscape. The vineyards are managed with minimal intervention, allowing the different varieties and terroirs to contribute complexity and a strong sense of place.
