A delicate oxidative character, reminiscent of flor and dried herbs, adds depth while maintaining freshness.

Palate:
Full-bodied yet energetic, showing a beautiful balance between richness and freshness. Ripe orchard fruits, citrus, and gentle nutty flavours are supported by creamy texture, subtle oak influence, and a mineral backbone. The finish is long, savoury, and elegant, with a refined oxidative complexity that makes it highly gastronomic.

Winemaking

The Chardonnay grapes are spontaneously fermented with indigenous yeasts and aged in barrique barrels, where the wine develops additional texture and complexity. The 2023 vintage experienced a natural flor veil during barrel ageing, contributing a subtle oxidative character while preserving freshness and balance. Produced without added sulphur, with minimal intervention and no unnecessary manipulation, the wine reflects Sunawi’s philosophy of allowing the grape to express its fullest potential.
